Inspired by Thai red curry, this butternut squash dish features steamed and seared squash in a creamy coconut sauce enriched with store-bought Thai red curry paste, fresh ginger, and spicy jalapeños.
Add the ginger and garlic and cook for 2 minutes, stirring. Add the squash, stock, salt, and pepper and bring to a boil over high heat. Reduce heat to medium and let simmer, covered, for 15 minutes.
